One-Pot Thai Green Curry Soup with Soup Dumplings

Cozy one-pot thai green curry soup with soup dumplings.


INGREDIENTS

  • 1 tbsp neutral oil  
  • 1 shallot, diced  
  • 1.5 tbsp minced ginger  
  • 3 garlic cloves, minced  
  • 1 tsp lemongrass paste (or ½ fresh stalk, minced)  
  • 2 tsp Thai green curry paste  
  • 1 can full-fat unsweetened coconut milk  
  • 3.5-4 cups chicken broth  
  • 6-8 MiLa frozen soup dumplings  
  • Your favorite pack of rice noodles or udon 
  • 1 tsp mirin  
  • 1 tsp dark soy sauce  
  • Pinch of salt  
  • Juice of ¼ lime  
  • Fresh cilantro + MiLa Ginger & Scallion Umami Sauce

INSTRUCTIONS

  1. Heat oil. Cook shallot, ginger, garlic, and lemongrass paste until soft (~3 mins).
  2. Add curry paste, stir 30 sec.  
  3. Pour in coconut milk + broth. Add mirin, soy, salt.
  4. Simmer 7 mins.
  5. Drop in dumplings + noodles Simmer 7-10 mins until noodles are tender.
  6. Turn off heat. Stir in lime juice. 
  7. Plate then top with cilantro + MiLa Ginger & Scallion Umami Sauce & enjoy!
