Steamed-Fried MìLà Potstickers in Mala Xianguo Sauce

Crispy and juicy steamed-fried MìLà Chicken Potstickers in a tangy and spicy Mala Xianguo Sauce.


INGREDIENTS

  • MìLà Chicken Potstickers
  • Mala Xianguo Sauce:
    • Black Vinegar
    • Chili Crunch
    • Sugar
    • Crushed Sichuan Peppercorn 
    • Doubanjiang
    • Garlic 
    • Scallion

INSTRUCTIONS

  1. In a cold pan, add enough oil to cover the bottom and place the potstickers flat-side down.
  2. Add 1/4 inch of water to cover the potstickers and turn the heat to medium.
  3. Once the water starts to boil, turn the heat to medium-low and let the filling cook through. This will take around 7-10 minutes (Tip: do not turn up the heat, or the potstickers will burn).
  4. In a bowl, combine ingredients for a makeshift Mala Xiangguo Sauce.
  5. When the potstickers are almost ready, pour in your sauce mixture and let it cook for around 3-4 minutes to let it soak in the sauce.
  6. Serve and enjoy!


3 tips to achieve the crispiest MiLa Chicken Potstickers:


  1. Start with a cold pan - add enough oil to coat the bottom and make sure each dumpling gets a little oil on its base
  2. Add enough water to cover 1/4 of the dumpling, cover and turn the heat to medium
  3. Once the oil/water mixture is hot, turn the heat to low. When the water is gone, and you hear the oil cackle, you’re ready to eat
