A soup dumpling (xiao long bao) is a steamed dumpling with seasoned filling and savory broth sealed inside a thin wrapper. The soup forms from a chilled stock infused with gelatin that melts as it steams.
Cooking Mila frozen soup dumplings at home is easy. No thawing needed. Steam directly from frozen over rolling boiling water in a lined steamer basket until the wrappers turn slightly translucent and the centers are hot and juicy, typically about 11minutes.
We recommend steaming Mila soup dumplings for best results. Steaming heats the dumplings gently and keeps them intact, but for a crisp-bottom twist, try a pan-steam: add a small splash of water, cover to steam, then uncover briefly to let the bottoms sizzle. Air-frying isn’t recommended.
To enjoy your Mila soup dumplings without losing the broth, let them cool for a moment. Lift with a spoon, bite a small vent, sip the hot broth, then enjoy the rest with your favorite dipping sauce. Ginger, vinegar, and chili oil are the classics.
